Sumac is a condiment that comes from the Rhus coriaria plant that grows and is cultivated in the Near East and Eastern Mediterranean. It has a subtle acidic aroma and a very characteristic sweet and sour flavour. In Eastern countries, it is used in lots of rice and meat-based recipes, although today it has become popular all over the world. It can be used with onion, to add aroma to fish, as an aperitif, or in salads mixed with a yoghurt dressing.
